Sugar-free Pumpkin Spice Waffles

We have both been feeling under the weather for the past few days.. we've had the MOTHER OF AUTUMN COLDS!!! Most probably down to the change in temperature. But nothing perks us up more than warm, sugar-free keto waffles, so I spent the majority of last weekend baking and tasting pumpkin spice waffles! Top them with butter, walnuts and your favourite sugar-free syrup! 

Ingredients:

200g Almond Flour
170g Pumpkin Puree
2 tsp Baking Powder
1 tsp Ground Cinnamon
1 tsp Vanilla Extract
4 Large Eggs
1/2 tsp Ground Ginger
80 ml Unsweetened Almond Milk

Method:

1. Preheat the waffle iron and grease with oil/butter 
2. In a large bowl combine the almond flour, NKD Living Erythritol, baking powder, cinnamon, and ginger.
3. Fold in the wet ingredients: the eggs, pumpkin puree, almond milk, and vanilla extract until well combined and thickened. Use a cup to scoop approx ¼ cup mixture into each quarter of your waffle maker, making sure you spread the batter to the edges.
4. Cook until golden brown on both sides. Top with butter and your favourite sugar-free syrup. This recipe should make at least 8 servings of 4-inch waffles.
