Low sugar plum galette

PLUM GALETTE

This tasty galette is a lovely weekend treat - the buttery pastry providing a lovely contrast with the fresh burst of seasonal plums.

Made with just a few simple ingredients, we use an egg wash with Erythritol Gold to achieve a really beautiful golden crust, with Granulated Erythritol bringing a delicious low calorie sweetness.

METHOD:

  1. Preheat the oven to 180C and line a baking tray with parchment.
  2. In a food processor add the flour, erythritol, salt and cold butter and pulse to combine into a crumble consistency.
  3. Tip in the water and pulse again until the mixture comes together as a ball.
  4. Tip out onto a floured surface and pat into an oval disc. Flour a rolling pin and roll into a 10-12 inch oval shape. Transfer to the lined baking tray. 
  5. Sprinkle the flaked almonds over the top of the galette, followed by the sliced plums. Then turn in the edges to form the crust. 
  6. Use a pastry brush to brush the egg wash onto the crust, then sprinkle over the golden erythritol. 
  7. Bake in the oven for 45-50 minutes until the crust is golden and the plums are juicy and bubbling.
