This tasty galette is a lovely weekend treat - the buttery pastry providing a lovely contrast with the fresh burst of seasonal plums.
Made with just a few simple ingredients, we use an egg wash with Erythritol Gold to achieve a really beautiful golden crust, with Granulated Erythritol bringing a delicious low calorie sweetness.

INGREDIENTS:
Crust:
- 1.2 cups plain flour
- 3 tbsp NKD Living Granulated Erythritol
- Pinch of salt
- 175g butter
- 1/4 cup cold water
Filling:
- 3/4 cup sliced almonds
- 400g plums
- 1 egg, beaten
- 1/3 cup NKD Living Erythritol Gold
METHOD:
- Preheat the oven to 180C and line a baking tray with parchment.
- In a food processor add the flour, erythritol, salt and cold butter and pulse to combine into a crumble consistency.
- Tip in the water and pulse again until the mixture comes together as a ball.
- Tip out onto a floured surface and pat into an oval disc. Flour a rolling pin and roll into a 10-12 inch oval shape. Transfer to the lined baking tray.
- Sprinkle the flaked almonds over the top of the galette, followed by the sliced plums. Then turn in the edges to form the crust.
- Use a pastry brush to brush the egg wash onto the crust, then sprinkle over the golden erythritol.
- Bake in the oven for 45-50 minutes until the crust is golden and the plums are juicy and bubbling.
