Ingredients:

Pastry:
💚 120g NKD Living Almond Flour

💚 130g Tapioca Flour

💚 4 tbsp NKD Living MCT Oil

💚 20g NKD Living Granulated Erythritol

💚 3 tbsp Almond Milk or Water

💚 Pinch of salt

Strawberry Jam:

💚 150g Strawberries, fresh or frozen

💚 2 tbsp NKD Living Granulated Erythritol

💚 2 tbsp Chia Seeds

Icing:

💚 1 cup NKD Living Powdered Erythritol

💚 4 tbsp Almond Milk or Water

💚 1/2 tsp Almond Extract

Instructions

  1. Mix the pastry ingredients together and add a splash of water if the pastry is too crumbly. You should be able to form a ball easily. Wrap with plastic film.

  2. Make your strawberry jam by mixing all ingredients in a sauce pan on medium heat. When thick, turn the heat off.

  3. Preheat oven to 175° (350C). Roll out the pastry on a lightly floured surface (tapioca flour) and cut out 10 circles. Add 1 tbsp of strawberry jam on all the circles and then cover with another circle. Press around each circles with a fork.

  4. Brush each pop tart with NKD Living MCT Oil and bake for 15 minutes.

  5. Mix icing ingredients in a small mixing bowl and drizzle over the cooled pop tarts.

  6. Enjoy - perfect for summer picnics, BBQ's and garden parties.
