NKD Living MCT Oil Salad

A vibrant & nutrient dense salad with a tahini dressing made with NKD Living MCT Oil & NKD Living Naked Syrup - deliciously satisfying on its own or as a lovely light side for a spring BBQ spread.

Ingredients:
Salad Greens
1/2 roasted Butternut Squash, roasted
500g of Tenderstem Broccoli, roasted
200g Tofu, cubed and fried (or preferred protein) 
1 Avocado, sliced
1/4 Red Cabbage sliced
3 tbsp Pumpkin Seeds, roasted

Tahini & MCT Oil Dressing:
2 tbsp of Tahini
Juice of 1 Lemon
1 tbsp of Miso Paste
Method:
  1. Add all the ingredients for your dressing in a glass jar, close and shake. 
  2. Layer your green salad leaves, red cabbage, roasted vegetables, protein, avocado and pumpkin seeds.
  3. Drizzle with dressing & enjoy!
