A moist and sweet carrot cake that's low in carbs, low in sugar and just 129 calories per slice... does it get better than that? Thanks to Sofia for this delicious recipe made with Nkd Living Granulated Erythritol, Powdered Erythritol & Almond Flour.

Method:
1. Preheat oven to 180C.
2. Mix wet ingredients together in a bowl and dry ingredients in another.
3. Add dry ingredients slowly with the wet ones.
4. Pour in a baking tray and bake for 35 minutes.
5. Once ready, cool down and mix icing ingredients together apart from the pecan nuts. Spread the icing on your loaf then add pecan halves on top.
