NKD Living Low Sugar Carrot Cake

A moist and sweet carrot cake that's low in carbs, low in sugar and just 129 calories per slice... does it get better than that? Thanks to Sofia for this delicious recipe made with Nkd Living Granulated Erythritol, Powdered ErythritolAlmond Flour.

Ingredients:
Wet ingredients:
💚 2 Eggs 
💚 120ml Soy Milk (or any other)
💚 125g Greek Natural Yoghurt 
💚 110g Carrots, grated and drained
Dry ingredients:
💚 40g Walnuts
💚 2 tsp Cinnamon
💚 180g Wholemeal Flour
💚 1tsp Baking Powder
Icing:
💚 100g Cream Cheese
💚 20g Nkd Living Powdered Erythritol
💚 10g Pecan Nuts, halved

Method:

1. Preheat oven to 180C.

2. Mix wet ingredients together in a bowl and dry ingredients in another.

3. Add dry ingredients slowly with the wet ones. 

4. Pour in a baking tray and bake for 35 minutes.

5. Once ready, cool down and mix icing ingredients together apart from the pecan nuts. Spread the icing on your loaf then add pecan halves on top.
