American Keto Pancakes

American keto pancakes are the perfect saturday morning breakfast recipe and the great thing is the recipe is so versatile, change your toppings to virtually anything! Still the best thing about it is that there's only 1g NET carbs per serving!

Ingredients:

2 scoops vanilla protein powder (50g)
2 tsp baking powder
1 tbsp coconut flour
2 eggs
1/4 tsp vanilla extract
4 tbsp salted butter or unsalted & add a pinch of salt
1 tbsp heavy cream
1 tsp coconut oil
Topping Ingredients:
NKD Living Powdered Erythritol & Squeezed Fresh Lemon
Blueberries, maple syrup & walnuts (shown in photos)

 

Method:

 

1. Combine the protein powder, baking powder, salt and coconut flour in a large mixing bowl.
2. Combine the eggs, vanilla extract, softened butter and heavy cream in a separate bowl.
3. Pour the liquid mixture into the centre of the powder mixture and mix constantly while pouring until the batter is combined.
4. This is the stage where you add your additions! Are you going keto? Add some crispy bacon or keep it fruity with some yummy blueberries! We have kept ours simple and plain because we like to sweeten ours after with toppings.
5. Heat up a pan with the coconut oil.
6. Test the heat by dropping a slither of the mixture in, if it fries, use a ladle to pour the mixture into the pan. The mixture should create 5 medium sized american pancakes.
7. Leave the pancake cook and when you see bubbles forming on the top wait for them to pop. When the holes remain after popping the pancake is ready to flip.
8. Use a spatula to flip the pancake in one swift motion and let it cook on its other side for  approx. a minute.
9. Stack the pancakes on a plate when cooked and sprinkle with your favourite topping.  NKD Living Powdered Erythritol & freshly squeezed lemon juice, blueberries, maple syrup, walnuts, nutella, crispy bacon, the list is literally endless….
