Cashew & Chocolate Energy Balls

These brilliant bites are made with two fibre-fuelled NKDLIVING products: Inulin for a kick of high-grade prebiotic fibre and Psyllium Husk Powder for natural soluble fibre. 

Light, filling and full of flavour - they make great snacks for lunchboxes or popping in your bag for busy days out. Pure nutrient-dense goodness!

Ingredients: (Makes 16)

  • 150g cashews – lightly toasted
  • 4 heaped tbsp desiccated coconut
  • 3 tsp NKDLIVING Inulin
  • 4 tsp NKDLIVING Psyllium Husk Powder
  • ½ tsp pink Himalayan salt
  • 4 heaped tbsp chunky peanut butter
  • 8 drops NKDLIVING Vanilla Stevia Liquid
  • 60g sugar-free dark chocolate chips
  • Sesame seeds and desiccated coconut to coat

Method:

  1. Place the toasted cashews in the bowl of a food processor and pulse until broken down.
  2. Add the shredded coconut, NKDLIVING Inulin, Psyllium Husk and salt and pulse to combine. Then add the peanut butter and Vanilla Stevia Liquid.
  3. Use a spatula to fold in the chocolate chips and press them into the mixture.
  4. Use your hands to mould the mixture into balls.
  5. Place the sesame seeds and desiccated coconut in 2 separate bowls and roll the balls to coat.
  6. Place in the fridge to cool for 30 minutes.
