Sugar-free Banana Bread

This Banana Bread recipe is our go to comfort food, quick & simple to make but completely indulgent, delicious and of course guilt free. 

Ingredients:

140g x Unsalted Butter
2 x Large Eggs, beaten
140g Self-Raising Flour
2 x Overly ripe Bananas mashed
A handful of dried Banana chips
 

Method:

Heat oven to 180C/160C fan/gas 4 

Butter a loaf tin (2lb) and line the base and sides with greaseproof paper.

Mix and cream the softened butter and NKD Living Granulated Erythritol until light and fluffy, then slowly add 2 beaten eggs with a little of the flour.

Mix in the remaining flour, 1 tsp baking powder and 2 mashed bananas.

Pour the mixture into the tin and bake for 30 mins, cool in the tin for 10 mins and remove to a wire rack.

Mix the NKD Living Powdered Erythritol with 2-3 tsp water to make the icing.

Drizzle the icing across the top of the cake and finish with the banana chips.
