INGREDIENTS:
CAKE:
πŸ’š 180g Oat Bran (blitzed)
πŸ’š 1 tsp Baking Soda
πŸ’š 1 tbsp Cocoa Powder
πŸ’š A pinch Xanthan
πŸ’š 12 tbsp NKD Living Granulated Erythritol
πŸ’š 8 tbsp Applesauce (blitzed)
πŸ’š 4 tbsp Skyr Yoghurt
πŸ’š 2 medium Eggs
πŸ’š Β½ cup Buttermilk
πŸ’š ΒΎ tsp Apple Cider Vinegar
πŸ’š 1 tsp Vanilla Paste
πŸ’š 4.5 tsp Red Food Colouring
FROSTING:
πŸ’š 6 Laughing Cow Extra Light Cheese Triangles
πŸ’š 250g Fat Free Greek Yoghurt / Skyr
πŸ’š 1 tsp Vanilla Paste
πŸ’š 5 tbsp Powdered Erythritol

METHOD:

  1. Preheat your oven to 180C
  2. Line & spray an 8X8 tin with baking parchment & fry lightΒ 
  3. In a medium mixing bowl, whisk together oat bran, baking soda, cocoa, and salt - set aside.
  4. In a large mixing bowl, combine the granulated erythritol & apple sauce until light & fluffy. Mix in the Skyr, beaten eggs, vinegar, buttermilk, vanilla & food colouring until well combined.
  5. Add the dry ingredients to the wet ingredients & mix until just combined.
  6. Pour the batter into the lined tin & bake for 30-35 minutes (until a toothpick comes out clean).
  7. Remove the cake from the oven & transfer the cake from the tin to a wire rack to cool.
  8. While the cake is cooling, prepare your icing by gently mixing the ingredients together.
  9. Once completely cool, spread the frosting over the cake.
  10. Store in an airtight container at room temperature for up to 2 days or refrigerate for up toΒ  5 days.
